DOUBLE- CONCENTRATE TOMATO SAUCE
Description
Produced from concentrated juice, itself made from ripe, healthy tomatoes. The juice is sieved through 0.5 mm diameter holes
Colour, smell and taste.
Typical of highly-refined products, with no burnt, mouldy or acidic after-taste.
Physical and chemical specifications*
- Bx: 28 min.
- pH: from 4.2 to 4.45
- Bostwich: from 5 to 9
- Acidity: AC/RS ≤ 9
- Sugars: Z/RS ≥ 43
- Salt: only the natural salt of the tomato
- Black Spots: after observing 10g of the product on a tile 10 x 10 cm, there should not be more than 5 spots with a diameter less than or equal to 0.6 mm and 1 spot with a diameter less than or equal to 1.5 mm.
- Gardner: average 2 a/b > 2 as determined on a product at 12.5 Bx - Lactic acid: ≤ di 3g/Kg.
Microbiological specifications
Commercially sterile product.
Packaging
On pallets each containing 4 semi-conical metal barrels. Each barrel contains a single layer polythene bag with a 1 inch hole, weighing 210 Kg net.
Foodstuffs produced in this way can be adapted to the various needs of the customer.
